dc.description.abstract International food trade, and foreign travel, is increasing, bringing important social and economic benefits. Many norms are elaborated to ensure food hygiene and should be used in conjunction with each specific code of hygienic practice, where appropriate, and with the guidelines of physicchemical and microbiological criteria. This paper presents the most popular three norms used in European area for audit or for implementation in the management system of food safety. en_US
